GASTRONOMY: Anglade Pierre, chef from Saint-Martin, opens his Caribbean restaurant in Tours | FAXINFO

Trained at the Daniella Jeffry vocational high school, Anglade Pierre is now an iconic figure in Saint-Martin, France. After a remarkable career in several Michelin-starred restaurants, he is now starting a new chapter in his life in Tours, Indre-et-Loire, where he is opening a restaurant with Caribbean flavors.

 

"My goal is to promote Saint-Martin here in France, and specifically in Tours. To do this, I will showcase my producers, artisans, and partners on the island, particularly Colombier Tradition, with its guavaberry and Omil' Épices."

 

The dish he will particularly highlight on his menu will be the pan-fried foie gras lacquered with Saint-Martin guavaberry, accompanied by duck gravlax flavored with guavaberry spices and a Johnny Cake accompanied by roasted Paris mushrooms stuffed with vegetables.

 

The restaurant, named AP by Anglade Pierre, will open its doors next January on Avenue Grammont in Tours. _LA
